Help setting a compressor

What’s the best way to compress a signal, do I compress only loud peaks or compress the entire signal and adjust the makeup gain to compensate loss of volume.

Usually I like to have a low setting compressor to just touch any peaks after I have a previous compressor in the signal chain, but when compressing a piano or vocals I know that if the piano is too dynamic in the mix then I would need to compress it more to even out the dynamics, but I have a hard time hitting the compressor just right

On vocals and piano, try the Leveler mode on the fader strip dynamics.
