Maybe it's just that my mind's gone blank - but what does the text
100% refer to underneath the pan control on a bus? I've tried adjusting various controls but nothing seems to change it from showing 100%

could be width and the number itself is the control? We had a width control in v8, didn't we?

As controls go, it's pretty strange looking but it seems like you're right... clicking the text allows the stereo width to be changed.
And speaking of v8... does anyone know what happened to the bus's
Spill button from v8? I never quite figured out why it was called Spill - but it allowed the mixer to display only those channels connected to this mixbus (which was quite useful...)

It was re-located to the top of the MB strip.

Thanks Dingo. I'm still baffled by why the routing assignments button is called Spill. Is it a common term that I've just never come across?
I've mostly used Neve consoles which did have a similar function (tho' I can't recall what Neve called it
)

Spill is a common term used in a number of DAWs to show only the tracks that are assigned to a particular Bus or VCA.
In Harrison enterprise MPC (IKIS) consoles it is known as profile or sweet spot mixing, basically the same concept as spill, a group of tracks (user assigned) or tracks assigned to a bus or VCA can be profiled and shown on the surface.
A very handy function when dealing with sessions that have a very large track count.
