I've read the entire 32c manual and have not seen any instructions on how to widen the channel strip. I can change the font size but not make the strip wider. Any info is much appreciated.

The option for narrow / wide channel strips is only available in MB not 32C.
Preferences / Appearance / Size and Scale / Mixer strip scale - depending on your monitor you can get 'fatter' channels by playing with scale.
