Can this be done, I tried using select all tracks and the turning down trim nob on one of the tracks but this didn't work, your help is greatly appreciated.

As far as I know, this is not possible right now. An alternative is to select all of the tracks in track view and then use Alt+6 / Alt+7 to adjust the track gain before it hits the mixer.

If you want to tweak the faders, there's a fairly easy way: go to the mixer window, select all tracks ( Cmd+T ), and use the keyboard +/- keys to bump all the faders up&down together. (note: this might not work if there is automation on some of the faders)
If you actually want to change the "input trim" then you might create a Lua script to do this. http://mixbus.harrisonconsoles.com/forum/forum-14.html One Lua script that already exists is "Faders to Trims" which, for each channel, creates a little "trim" plugin which it inserts immediately after the fader, and moves the fader to unity. Maybe you can tweak that to meet your needs.
